A Canticle for Leibowitz is the most significant sci-fi I have read. It explores the world after a nuclear holocaust and traces its build up similar to the Roman empire, with a monastery named after a man who was burned for trying to protect the knowledge of the old world, Leibowitz. This book reads easily with the exception of the really odd Jewish reflection near the middle that doesn't seem to tie into anything. A must read for... anyone.
